Banana Flavored Mini Doughnuts

Ingredients:

2 bananas

2 tbsp sugar

120 g all-purpose flour

1/2 baking powder

1 egg

300 ml cooking oil

1 tbsp coconut flour

Preparation:

Crush both bananas with a fork, add the sugar, flour, egg, baking powder, and mix everything up nicely. Heat some cooking oil in a smaller deep fryer and place a tablespoon in it, to heat it up. With it, place all doughnuts inside the fryer and fry them until they become reddish. Once you pull them out of the fryer, place them on some paper napkins to absorb as much fat as possible. Sprinkle coconut flour on all mini doughnuts while they’re still hot.

Zucchini Croquettes

Ingredients:

600 g zucchini

200 g all-purpose flour

2 eggs

1 baking powder

400 ml cooking oil

salt

Preparation:

Peel the skin off all zucchini and grate them with the larger grating surface, sprinkle a little salt, and let them rest for a while to release some “juice”. Now squeeze them dry, add the eggs, flour, baking powder, and mix them all up. Oil up a tablespoon and with its help, create croquettes (whichever size works for you), then place them in heated deep fryer full of cooking oil. Fry both sides until they become reddish. Place each croquette on a paper napkin to absorb all its grease. That about sums it up :)

Beetroot Salad

Ingredients:

1 large beetroot

3 carrots

2 green apples (sour)

2 tablespoons olive oil

100 g mayonnaise

100 ml sour cream

Preparation:

Clean the beetroot, carrots, and apples, then grate them on a large grating surface. Place them all in a salad bowl and mix each other with cooking oil. In a separate bowl, mix the sour cream and mayonnaise and use it as a dressing for the salad. Stir slowly and let it cool off in the fridge. All done here :)

Stuffed Tomatoes

Ingredients:

4 middle-sized tomatoes

4 eggs

100 g smoked ham

100 g cheese

oregano

Preparation:

Clean all tomatoes, then cut their tops off, thus creating a cap. Using a teaspoon, gently make little caves inside each tomato, and make sure you haven’t destroyed any walls.Cut the ham into sticks and grate the cheese. Stuff each tomato with this mixture, then sprinkle some oregano on top. Break each egg and place it on top of each tomato. Put these tomatoes in a baking pan covered with parchment paper and let it roast for about 20 minutes at a temperature of 200°C (392°F)

Vegetables Pie

Ingredients:

6 eggs

200 ml yogurt

200 ml cooking oil

2 tbsp. chopped celery

500 g all-purpose flour

1 baking powder

1/2 tsp.  powdered garlic

1 tsp. basil

100 g cherry tomatoes

1 red paprika

50 g black olives (boneless)

150 g portobello mushrooms

4 tbsp. olive oil

Preparation:

Separate the egg whites from all egg yolks and use an electric mixer to create “snow” out of them. In a separate bowl, mix all egg yolks, cooking oil, yogurt, flour, baking powder, powdered garlic, a little salt, and basil. Now add the “snow” inside this mixture and stir everything nice and slow.

Pour this mixture into a baking pan. Cut the paprika into strips and mushrooms into circles. Use a pastry brush to cover the upper dough layer with whisked egg (previously prepared in a small bowl), then press into the dough all vegetables. Bake for about 35 minutes at a temperature of 180 °C (356°F).

Turkey Omelette

Ingredients:

15 eggs

200 g bread crumb

200 g smoked turkey

100 g bacon

1 leek

3 tbsp. cooking oil

Preparation:

Cut the smoked turkey meat and leek into smaller cubes. Repeat the same step with all bacon slices, and fry them for a short while, then place them on a few paper napkins, to absorb all the grease. Place all eggs and bread crumb in a larger mixing bowl and mix ’em up with an electric mixer. In this mixture you’ll add the bacon, turkey, and sliced leek. Spice it up and stir slowly.

Cover a baking pan with parchment paper on the inside, then pour this mixture inside. Bake in a pre-heated oven at a temperature of about 180°C (356°F). Once it’s done baking, let it cool off before serving.

Black Forest Fruit Muffins

Ingredients:

75 g butter

120 g sugar

1 tsp. vanilla extract

2 eggs

200 g all-purpose flour

1 tsp baking powder

50 g ground almonds

180 ml milk

100 g frozen raspberries

150 g blueberries

Preparation:

Place the butter in a mixing bowl and use your electric mixer on it. Then pour a teaspoon of vanilla extract in it, along with all the sugar, and mix it all together once more. Add the eggs one by one inside, mix each egg for 1/2 minute, then pour in 1/2 of the milk. In a separate bowl, mix the flour, baking powder, and ground almonds, then add them in the other bowl.

Mix once more and finally, pour in the rest of the milk. Once it becomes unified, pour in all forest fruits and stir with a spoon. This mixture can be placed either in a muffin pan or a regular shaped pan. Bake for about 20-22 minutes at a temperature of 200 °C (392°F)
